Ingredients
- 100 g unsalted butter
- 80 g ½ cup firmly packed brown sugar
- 4 tablespoons golden syrup
- 250 g 2 ½ cups rolled oats
- 1 tablespoon sesame seeds
- 1 tablespoon sunflower seeds
- 1 tablespoon pepitas
- 1 apple peeled and grated (juice squeezed out)
- 1 small carrot grated (juice squeezed out)
Instructions
- Preheat the oven on convection 180℃
- Place the butter, sugar and syrup into a microwave safe bowl and melt on medium microwave for 2-3 minutes
- Mix in the oats, seeds, apple and carrot, making sure it is thoroughly mixed
- Press the mixture in a 20cm square baking tin, lightly greased
- Bake on convection 180℃ for 20-25 minutes or until golden brown and firm to touch
- Cut into 10 bars whilst still warm and store in the fridge
- Serving suggestion : Serve a muesli bar as a snack alongside some Greek or Natural Yoghurt and sliced strawberries
- Storage : Keep muesli bars in an airtight container in the fridge for up to 5 days. Alternatively, freeze in individual portions for up to 3 months.
