Servings: 5
Ingredients
- 1 Ripe banana
- 1 Egg
- 30 ml Vegetable oil
- 50 g Plain flour
- ½ tsp Baking powder
- 30 g Caster sugar
- ½ tsp Ground cinnamon + extra for sprinkling
- 30 g Dark chocolate chips optional
Instructions
- In a medium bowl, mash the banana thoroughly with a fork. Add the egg and oil and whisk with the same fork to combine.
- Add the flour, baking powder, sugar and ground cinnamon and stir through with a spatula. Finally fold through the chocolate chips, if using.
- Place 5 metal or plastic moulds into the steaming basking, then place a cupcake liner in each mould. Evenly divide the cupcake mixture between the cupcake liners and finish with a sprinkle of extra cinnamon.
- Place ½ measuring cup of water into the pan, place the steaming basket in place and close the lid.
- Select the ‘Quick Cook/Steam’ function, make sure it is set at 30 minutes then press start.
- When the cupcakes are finished, remove the steaming basket from the rice cooker and set aside to cool.
- Enjoy warm or allow to cool to room temperature and store in an airtight container.
Notes
You don’t have to use metal or plastic moulds to make the cupcakes, you can place the cupcake liners directly into the steaming basket, but you won’t get the nice round shape as shown.
