Ingredients
- 2 small-medium sweet potatoes
- 1 brown onion
- 1/2 tsp salt
- 2 tsp taco seasoning or more to taste
- 1 flax egg (1 TBSP ground flax seeds mixed with 3 TBSP water)
- 1 400g can black beans drained and rinsed
- 1 cup spinach
- 6 tbsp bread crumbs use gluten-free if necessary
Instructions
- Pierce sweet potatoes with a fork all over. Place in the microwave and microwave on the MICROPOWER setting for 20 minutes.
- In the meantime, add all remaining ingredients to a food processor.
- Once the sweet potatoes are cooked, slice lengthways and scoop out the flesh and add to the food processor.
- Process until a tacky mixture forms.
- Roll into balls and place on the microwave grill tray and Grill on the GRILL 2 setting for 20- 25 minutes. This gives an air fryer-style cooking result.
- Serve with guacamole and salsa.
