Ingredients
- 2 Eggs beaten
- 150 ml Vegetable oil
- 150 g Self raising wholemeal flour
- 100 g Soft light brown sugar
- 10 ml Cinnamon
- 75 g Raisins
- 100 g Carrots grated
For icing
- 50 g Cream cheese
- 50 g Butter
- 100 g Icing sugar
- 10 ml Lemon juiced
- 50 g Walnuts chopped
Instructions
- Mix eggs and oils together
- Combine flour, sugar, cinnamon, raisins and carrots in a mixing bowl and pour egg mix into flour and stir well
- Pour into dish and cook on the enamel tray on combination: Grill 3 + 440 W for 8 minutes
For the icing
- Beat cream cheese and butter together and gradually add icing sugar and lemon juice
- Decorate the cake with icing and sprinkle with walnuts
