Ingredients
- 2 tbsp olive oil
- 2 tbsp butter
- 2 cloves garlic chopped
- 200 g chicken breast cut into small pieces
- 2/3 cup shredded carrots
- 1/3 cup chopped spring onions white part
- 2 cups white rice washed and soaked
- 2 ¾ cups chicken stock or water
- Salt to taste
- 1 tsp crushed black pepper
- 1 tbsp soy sauce
- 1/3 cup chopped spring onions green part
Instructions
- Turn the rice cooker to ‘quick cook’ option.
- Add olive oil, butter, and garlic. Saute for 1 min.
- Add the chicken pieces. Saute the chicken for 2-3 mins.
- Add the vegetables and saute for 1-2 mins.
- Add rice, chicken stock/water, salt, black pepper, soy sauce and close the lid of the cooker.
- Select the ‘white rice’ option. When the rice is done it will automatically switch to the ‘keep warm’ option.
- Add green onions and serve.
