Chocolate Chip Banana Bread

Ingredients

  • 2 eggs
  • 100 g caster sugar
  • 100 ml vegetable oil
  • 2 tbsp milk
  • 3 ripe bananas
  • 200 g self-raising flour
  • 1 tsp baking powder
  • 1 tbsp ground cinnamon + 1/2 tsp extra for dusting
  • 100 g chocolate chips

Instructions

  • Grease and line a microwave safe loaf pan with non-stick baking paper. Set aside.
  • In a large mixing bowl, whisk together the eggs and caster sugar until pale. Add the vegetable oil and milk then whisk to combine.
  • In a smaller bowl, mash 2 of the bananas together until smooth.
  • Add mashed banana, self-raising flour, baking powder and 1 tablespoon of cinnamon to the egg mixture. Using a spatula or wooden spoon, mix until just combined. Fold through the chocolate chips.
  • Pour the banana bread mixture into the prepared loaf pan. Cut the remaining banana in half lengthways and place on top of the banana bread. Sprinkle the remaining cinnamon over the top.
  • Place the loaf pan in the microwave and cook on Microwave, Medium power for 13 minutes.
  • When the banana bread has finished cooking, remove from microwave. Allow to cook in loaf pan for 5 minutes before removing to cool completely. Can be served warm, but cool completely before slicing for lunchboxes.
