Christmas Fruit Cake

Is there a more perfect time of year to make a fruit cake? This recipe from Sugar Salt Magic features dark brown sugar and treacle to give it an aromatic caramel flavour plus cinnamon, ginger, mixed fruits and glace cherries to make it a truly festive treat! Baked in the Panasonic SD-YR2550 Automatic Bread Maker.

Ingredients

FOR THE CAKE

  • 1 cup plain flour
  • ½ tsp baking powder
  • 1 tsp mixed spice
  • ½ tsp ground cinnamon
  • ½ tsp ground ginger
  • 125 g unsalted butter
  • ½ cup dark brown sugar
  • 1 tsp treacle
  • 3 eggs
  • 300 g dried mixed fruits mixed fruit and glace cherries
  • 100 g glace cherries

FOR THE ROYAL ICING

  • 2 cups icing sugar 260g
  • 2 tbsp water
  • ¼ tsp cream of tartar
  • 1 tbsp meringue powder
  • 1 tsp vanilla extract

Instructions

  • Whisk together flour, baking powder and spices. Set aside.
  • Beat together butter, sugar and treacle until fluffy.
  • Add eggs and beat until smooth.
  • Add dry ingredients and beat to just combine.
  • Mix in dried fruit and glace cherries with a spatula.
  • Remove kneading/mixing hook. Line base of bread pan with baking paper.
  • Select menu 26, then select 55 minutes.
  • Test with toothpick. Sticky crumbs are ok, but bake another 5 minutes if batter is still wet.
  • For the icing, mix everything together in a bowl until quite thick but smooths out after 10-15 seconds. Pour over the top of the cooled cake.
