Ingredients
- 8 eggs beaten
- 125 ml milk
- 1/4 tsp ground black pepper
- 200 g cherry tomatoes halved
- 50 g baby spinach roughly chopped
- 150 g bacon rind removed, roughly chopped
- 200 g tasty cheese grated
Instructions
- Lightly grease a microwave safe pie dish with butter or cooking spray oil. Set aside.
- In a large bowl, whisk together the eggs, milk, and black pepper.
- Add the tomato, spinach, bacon, and cheese to the egg mixture. Using a spatula or wooden spoon, mix thoroughly.
- Pour the quiche mixture into the prepared pie dish. Place in the microwave and cook on Microwave, high for 18 minutes.
- When the quiche is cooked, remove from the microwave oven and allow to cool. Can be served warm or allowed to cool completely before slicing for lunchboxes.
