Microwave Penne Pomodoro

No stove? Don’t stress! This homely Penne Pomodoro recipe can be cooked entirely in the Panasonic NN-SF57QSQPQ Microwave Oven. Its innovative flatbed design means you can cook and reheat large microwave safe casserole dish with ease!

Ingredients

  • 375 g penne pasta
  • 1.5 L boiling water
  • 2 garlic cloves minced
  • 2 tbsp olive oil
  • 400 g tin crushed tomatoes
  • 200 g tomato passata
  • 1 tbsp tomato paste
  • 1 tsp dried oregano
  • 1 tsp sugar
  • salt & pepper
  • 1 tbsp parsley finely chopped
  • freshly grated parmesan to serve
  • basil leaves to serve

Instructions

  • Start by making the sauce; place 1 tablespoon of olive oil and garlic in a large rectangular casserole dish that fits inside the microwave. Stir to combine then cook on High for 1 minute. Add the crushed tomatoes, passata, tomato paste, oregano, sugar and some salt and pepper. Stir well to combine everything. Cover with a lid or plastic wrap. Cook on High for 10 minutes. Take the dish out, add parsley and stir. Cover and cook for a further 10 minutes on High. Set aside to rest while you cook the pasta.
  • Place pasta, 1 tablespoon of olive oil and boiling water in a 4-litre microwave safe bowl or dish. Cover with lid or plastic wrap. Cook by Auto Cook ‘Pasta’. Dial in 350g then press Start. Halfway through the oven will beep twice, that is your queue to open the door and stir. Allow pasta to stand for 5 minutes after cooking, then drain.
  • Add the pasta to the sauce and stir well to combine. Serve with parmesan cheese and fresh basil leaves.
