Ingredients
- 1 measuring cup quinoa
- ½ cucumber thinly sliced
- 5 radishes thinly sliced
- ¼ cup dill leaves roughly chopped
- 1 cup mint leaves
- 100 g feta crumbled
Dressing
- 60 ml extra virgin olive oil
- 1 garlic clove minced
- 1 lemon juiced
- 1 tbs white vinegar
- 1 tsp dijon mustard
- Sea salt
- Cracked black pepper
Instructions
- Place the quinoa into the inner pan, along with two measuring cups of water. Select the 'Quick Cook/Steam' setting.
- When the quinoa is cooked, press the 'Off' button. Open the lid and use the Rice Scoop to fluff up the quinoa and allow to cool.
- While the quinoa is cooling, make the dressing. Place the dressing ingredients into a small bowl and whisk to combine.
- Place the cucumber, radishes, dill, mint and feta into a large serving bowl. Add the quinoa and dressing and toss well to combine.
