Rainbow Pasta Salad

We call this recipe our Rainbow Pasta Salad because of its vibrant mix of colours, and the use of bow tie pasta to give it an extra sprinkle of fun in your child’s lunchbox! Cooked in the Panasonic NN-SF574S Flatbed Inverter Microwave Oven.

Ingredients

  • 250 g bow tie farfalle pasta
  • 250 g frozen chopped vegetables
  • 1/2 red capsicum diced
  • 1/2 cup Italian salad dressing
  • 1/3 cup whole egg mayonnaise

Instructions

  • Start by cooking the pasta using Auto Cook menu. Place the pasta in a 3-litre safe bowl, along with 5 cups of boiling water and 1 tablespoon of olive oil. Cover with plastic wrap or a fitted lid. Place container at the centre of the flat table. Select program 14, Pasta and weight, 250g then press Start.
  • Open the door to stir when the microwave beeps twice during cooking, press Start Pad to continue. Allow pasta to stand for 5 to 10 minutes after cooking if required then drain.
  • Place the frozen vegetables in a microwave safe container. Cover with a lid or plastic wrap and place container at the centre of the flat table. Select program 7, Frozen Vegetables and weight then press Start. Add salt and other seasonings after cooking, then stir.
  • Place the pasta, vegetables, capsicum, salad dressing and mayonnaise in a large bowl to combine, then serve.
