Self-Saucing Christmas Pudding

This delectable dessert will have everyone talking the next day! Creating this Self-Saucing Christmas Pudding is simplified by using the Panasonic NN-DS59NB 4-in-1 Steam Combination Microwave Oven. Kick back and enjoy your Christmas party while this delicious dessert bakes away!

Ingredients

Christmas Pudding

  • 200 g mixed fruit
  • 3 tbsp brandy
  • 185 g self-raising flour
  • 50 g dark brown sugar
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1 tsp mixed spice
  • 100 g unsalted butter melted
  • 125 ml milk
  • 60 ml golden syrup
  • 2 eggs
  • Double cream or ice cream to serve

Sauce

  • 150 g dark brown sugar
  • 2 tbsp cornflour / corn starch
  • 250 ml boiling water

Instructions

  • The day before, soak the mixed fruit in brandy in a covered container. Allow to soak overnight.
  • Preheat microwave to convection 160°C.
  • Grease a 23cm round, 5cm deep baking dish with butter and set aside.
  • Make the pudding batter by placing the flour, sugar, and spices in a large bowl. Whisk to combine. Add the butter, egg, milk, and golden syrup to the flour mixture and whisk until combined. Fold through the mixed fruit. Scrape into the prepared baking dish and smooth the surface.
  • To make the sauce, combine the brown sugar and corn flour in a small bowl. Sprinkle the sugar mixture all over the surface of the pudding. Pour the boiling water over the surface over the back of a metal spoon so you don't break the surface of the batter.
  • Place the baking dish on the grill tray and place into the lower shelf position. Dial in 40 minutes and press start.
  • When the microwave beeps, remove the baking dish from the oven and allow to sit for 5-10 minutes.
  • Serve with double cream or ice cream.
