Upside Down Orange and Walnut Cake

Ready for the perfect afternoon pick-me-up? This Upside-down Orange and Walnut cake recipe is the ideal accompaniment with a large pot of your favourite tea (or coffee). Created effortlessly in our reliable SR-HL151KST 1.5L Induction Heating Rice Cooker, this sweet and warm treat is a true joy.

Ingredients

  • 2 cups Plain flour
  • 1/2 cup Caster sugar
  • 2 Eggs
  • 1 cup Walnuts chopped
  • 1/2 cup Vegetable oil
  • 1 cup Fresh orange juice
  • Zest of a whole orange
  • 1 tbsp Baking powder
  • 1-2 Sliced oranges for the base of the pan

Instructions

  • Grease the inner pot of the rice cooker with butter to prevent sticking. Then sprinkle some caster sugar over the butter and place the sliced oranges at the base of the pan.
  • In a mixing bowl, combine the walnuts and sugar and sift the flour and baking powder. Mix well to ensure even distribution of the dry ingredients.
  • Add the vegetable oil, eggs, fresh orange juice, and orange zest to the dry ingredients. Mix until the batter is smooth and well combined. Be careful not to overmix.
  • Pour the batter into the greased inner pot of the rice cooker.
  • Close the rice cooker lid and set it to the regular cake mode for 45 minutes. Let the cake cook until it’s done. The rice cooker will automatically switch to the warm mode when the cake is ready.
  • Once the cake is done, carefully remove the inner pot from the rice cooker and let the cake cool in the pot for a few minutes. Then, transfer the cake to a wire rack to cool completely.
