Ingredients
- 1 cup raw cashews soaked for 15 minutes in boiling water
- 1/4 cup arrowroot powder or corn flour
- 2 cups soy milk
- Juice of 1 lemon
- 1/2 cup coconut sugar
- 4 TBSP agar powder
- 1 tsp vanilla extract
- pinch salt
- 1/2 cup water
- 4 -6 tsp coconut sugar for the top
Instructions
- Add all ingredients into a high-speed blender and blend until smooth. Pour mixture into ramekin dishes.
- Fill the water tank on the bottom of the microwave.
- Place ramekins on microwave tray and steam in the microwave on STEAM 2 setting for 25 minutes.
- Remove from microwave and allow to cool completely. This will set the mixture and make it firm.
- Once cooled, sprinkle 1 tsp of coconut sugar onto the top of each ramekin and place back into the microwave on GRILL 1 for 7 minutes. Makes 4-6 portions depending on the size of ramekins used.
